Overall

We got there around 1830 on 03 JUL and they had already sold out of ribs and chicken. I got pork and brisket. The brisket was out of this world. I chose 2 meats ($13.99) and my wife 1 meat ($11.99).

My two sides were potato salad and beans. Potato salad tasted like what you would buy from a deli--not a fan. The beans were made from scratch--actually using the bits and scraps of meats. They were great.

Most of the desserts were sold out. From the ones I saw almost all were frozen store bought. We did not purchase any.

Our Texas Toast was a bit dry. Probably made hours earlier and kept warm.

Also, as a huge plus, in the back dining room was a sign indicating Firearms were welcome. I will patronize and support any and all Pro 2A businesses.

The prices were higher than expected. I assume he must keep prices high to cover expenses. With limited seating and sporadic hours, there is not a steady income stream.

As I said earlier, the brisket is great. The pork was standard run-of-the-mill Alabama pork. My rating is justified simply for the brisket. I will try again to get some ribs. Unless they are out of this world, I will probably drive past this restaurant on my way to Big Bob Gibson in Decatur when in the mood for ribs and pork.

If you have not tried the food, stop in. It is worth at least a visit.

Absolutely the best barbecue east of the Pecos... Well, make that the Mississippi. To find Barbecue Briquette, Ribs and Hot Links equal to The Chuck Wagon's you have to travel to central Texas. Wonderful, authentic Texas style BBQ. Be prepared to wait inline a bit. By virtue of demand, The Chuck Wagon, is kinda exclusive. Truly an epicurean, BBQ aficionado must have. If only we had an equivalent Tex-Mex restaurant here in the Rocket City, I would need not ever return to Austin.

THE BEST, PERIOD!

Wow, I have eaten a lot of ribs in my short 37 years of life but this is the best ribs I have ever eaten in my life. No, it is not an exaggeration, I really mean it.

As I bit into that delicious rib I actually heard angelic music! Time stood still and my mouth exploded with flavors that took me to a deep, profound sense of savoring satisfaction.

After all these years of eating BBQ I wasn't aware I was searching for that certain taste. Well Chuck Wagon BBQ in Madison, Alabama is not only the taste I was searching but it was the EXPERIENCE. Was it the small wooden structure? Was it the excellent scent of smoked meat greeting you as you enter the sacred house of BBQ? Was it the large Texan serving the food? Well, to me it was the Love. To me the Chuck Wagon BBQ is an expression of a man's dedication to doing what he Loves. One man's honest self expression transcends culture and touches so many lives.

So how did I come about the sacred place of BBQ perfection? Well, I am currently enrolled at CTI ( An Exceptional School of HVAC/Refrigeration in Huntsville Alabama) and I live in Southern California (city of Mission Viejo). So while I was in class (during break time) I mentioned my love for great tasting ribs. A class member sitting across from me said, "Well if you like ribs then you got to check out the Chuck Wagon BBQ."

So Lloyd, my wife Michelle and I went over and enjoyed the friendliness, atmosphere, and the best tasting BBQ I've ever had. They also make a very good pie.

To anyone wondering what years of dedication, joy of cooking and honest self expression in the form of BBQ taste like then I suggest you try The Chuck Wagon BBQ.

It left me satisfied. A feeling I had not experienced in BBQ, until now. Thank you Chuck Wagon. I will be back.
