Matador Processors is an independently owned frozen food manufacturer. The company began in 1975 after the founders, Clif and Betty Wood, went to a restaurant and were disappointed by the mediocre Chile Relleno they d been served. The couple set out to start a company that would provide quality Chile Relleno, and Matador Processors has been shipping its products throughout the United States and several foreign countries ever since. Chile Relleno, which means stuffed pepper in Spanish, was once a traditional Mexican dish but has evolved into an American delicacy. Matador s version consists of a mild Anaheim pepper filled with beef or cheese and then breaded. In addition, the company produces appetizers and hors d oeuvres, such as stuffed jalapenos, breaded mushrooms and jalapeno cheese bites; and desserts, such as apple empanada and cinnamon cheesecake. Matador s food products are distributed to restaurants, bakeries, delis, ice cream shops and coffee houses.
